- 2 tablespoons vegetable oil or any neutral oil
Instructions
- Heat the oil: Heat the vegetable oil in a large pan or wok over medium-high heat. If using a wok, allow the oil to smoke slightly for added flavor; if using a regular pan, skip this step.
- Cook the eggs: Pour in the beaten eggs and quickly stir-fry them so they start to form soft curds. Cook until they take shape but remain moist.
- Add the rice: Toss the cold rice into the pan with the eggs. If the rice is clumped together, break it apart gently using your spatula to separate the grains.
- Incorporate green onions and oil: Push the rice and eggs to one side of the pan to clear space. Add the remaining oil to the empty side along with the finely chopped green onions. Stir the green onions in the oil quickly, then mix everything together thoroughly.
- Season: Pour soy sauce and sesame oil along the edges of the pan for even distribution. Toss all ingredients well until the rice grains are evenly colored a light brown.
