- 10 jumbo shrimp, peeled and deveined
- 1 green onion, finely chopped

- ½ teaspoon sesame seeds, for garnishing
Noodle Sauce
- 2 teaspoons sesame oil
- 1 teaspoon gochugaru (Korean red pepper flakes) or red pepper flakes (double the amount for more spice)
- 1 teaspoon white granulated sugar or cane sugar
- ½ teaspoon chicken bouillon powder
- ½ teaspoon Chinese black vinegar (can substitute apple cider vinegar, rice vinegar, or white vinegar)
- 2 teaspoons dark soy sauce
- 2 teaspoons regular soy sauce
Instructions
- Prepare Noodles: Soak frozen udon noodles in hot boiling water for about 30 seconds, just until loosened. Drain and set aside.
- Cook Shrimp: Heat vegetable oil in a large pan over medium heat. Fry the shrimp until they turn pink, curl up, and are cooked through. Remove shrimp from pan and set aside, being careful not to overcook.
- Sauté Aromatics: Lower heat to medium-low. Add minced garlic and chopped green onions to the pan and sauté for about 10 seconds until fragrant.
- Add Sauce Ingredients: Quickly add sesame oil, gochugaru, sugar, chicken bouillon powder, Chinese black vinegar, dark soy sauce, and regular soy sauce in that order to the pan. Stir to combine, taking care to avoid burning the ingredients.
- Toss Noodles in Sauce: Add the drained udon noodles to the pan and toss well until the noodles are evenly coated with the sauce.
- Combine Shrimp and Noodles: Add the cooked shrimp back into the pan and toss gently to combine. Remove from heat.
- Garnish and Serve: Sprinkle sesame seeds and extra chopped green onions on top before serving. Enjoy immediately!
