Description

A quick and healthy 15-minute garlic shrimp in tomato sauce made with only 5 ingredients. Juicy shrimp, fresh tomatoes, garlic, dill, and olive oil come together in a flavorful, gluten-free, paleo, and low-carb dish perfect for busy weeknights.


Ingredients

4 tomatoes, chopped

5 garlic cloves, minced

1 pound large shrimp, peeled and deveined

A bunch of dill, chopped

2 Tbsp olive oil


Instructions

  1. Chop the tomatoes into small pieces.
  2. Heat a non-stick pan and add 1 tablespoon of olive oil.
  3. Sauté the tomatoes in the pan, cover with a lid, and cook for 4–5 minutes until softened into a sauce-like consistency.
  4. Add the shrimp to the pan and cook for 4–5 minutes until they turn pink and fully cooked.
  5. Stir in minced garlic, chopped dill, and the remaining tablespoon of olive oil. Mix well.
  6. Serve immediately and enjoy.

Notes

  • You can substitute fresh tomatoes with about 3 cups of canned diced tomatoes.
  • Experiment with herbs like basil, oregano, or thyme instead of dill.
  • Add vegetables like spinach, zucchini, or bell peppers for extra nutrition.
