A quick and healthy 15-minute garlic shrimp in tomato sauce made with only 5 ingredients. Juicy shrimp, fresh tomatoes, garlic, dill, and olive oil come together in a flavorful, gluten-free, paleo, and low-carb dish perfect for busy weeknights.
Ingredients
4 tomatoes, chopped
5 garlic cloves, minced
1 pound large shrimp, peeled and deveined
A bunch of dill, chopped
2 Tbsp olive oil
Instructions
- Chop the tomatoes into small pieces.
- Heat a non-stick pan and add 1 tablespoon of olive oil.
- Sauté the tomatoes in the pan, cover with a lid, and cook for 4–5 minutes until softened into a sauce-like consistency.
- Add the shrimp to the pan and cook for 4–5 minutes until they turn pink and fully cooked.
- Stir in minced garlic, chopped dill, and the remaining tablespoon of olive oil. Mix well.
- Serve immediately and enjoy.
Notes
- You can substitute fresh tomatoes with about 3 cups of canned diced tomatoes.
- Experiment with herbs like basil, oregano, or thyme instead of dill.
- Add vegetables like spinach, zucchini, or bell peppers for extra nutrition.
- Add red pepper flakes or chili for a spicy version.
- Store leftovers in an airtight container in the refrigerator for up to 2–3 days.
