Description

This Apple Cider Doughnut Bread captures the cozy essence of fall with warm spices, apple cider reduction, and a cinnamon-sugar topping. Moist and flavorful, it’s perfect for breakfast, dessert, or a seasonal snack.


Ingredients

1 cup apple cider

2 cups all-purpose flour, spooned & leveled

1 ½ teaspoons baking powder

½ teaspoon baking soda

¾ teaspoon kosher salt

1 teaspoon ground cinnamon

¼ teaspoon freshly grated nutmeg

¼ teaspoon allspice

½ cup unsalted butter, softened

½ cup brown sugar, packed

½ cup granulated sugar

2 large eggs, room temperature

2 teaspoons vanilla extract

½ cup unsweetened applesauce

½ cup granulated sugar (for topping)

2 teaspoons ground cinnamon (for topping)

4 tablespoons unsalted butter, melted (for topping)


Instructions

  1. Preheat oven to 350°F. Grease a 9×5 loaf pan, line with parchment paper, and set aside.
  2. In a small saucepan, simmer apple cider over medium heat until reduced by half (about 20–25 minutes). Let it cool for 10 minutes.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  4. In a large mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  5. Add eggs one at a time, then mix in applesauce and vanilla extract.
  6. Alternate adding the dry ingredients and cooled apple cider to the wet mixture, mixing just until combined.
  7. Pour batter into the prepared loaf pan and bake for 50–55 minutes, or until golden and a toothpick inserted in the center comes out clean.
  8. Cool the bread in the pan for 10 minutes, then transfer to a wire rack. Let it rest for another 5 minutes.
  9. Brush melted butter over the warm bread, then generously coat with the cinnamon-sugar mixture.
  10. Allow bread to cool completely before slicing and serving.

Notes

Do not skip reducing the apple cider — it intensifies the flavor.

Use room temperature ingredients to avoid a dense loaf.

You can add chopped apples or nuts for extra texture.

Apple pie spice can replace individual spices for convenience.

Store in an airtight container for up to 3 days or freeze for up to 2 months.
