Ingredients
Chia Pudding Base
- 1/2 cup Chia Seeds
- 1 tbsp Miso Paste (optional)
- 3 pcs Medjool Dates
- 1 tsp Cinnamon
- 1 tsp Cardamom
- 1 cup Soy Milk
- 1/2 cup Soy Yogurt
Topping
- 1 cup Oats
- 1/2 cup Walnuts
- 3 pcs Medjool Dates (additional for topping)
- Pinch of Salt
Layering
- 2 cups Apples, diced
- 1/4 cup Apple Butter
- 1 tbsp Maple Syrup (for sautéing apples)
- 1 tsp Cinnamon (for sautéing apples)
Instructions
- Prepare the Chia Pudding Base: In a blender, combine the soy yogurt, apple butter, Medjool dates, miso paste (if using), vanilla extract (approximately 1 tsp), cinnamon, cardamom, and soy milk. Blend until the mixture is smooth and creamy.
- Mix in Chia Seeds: Pour the blended mixture into a medium bowl and whisk in the chia seeds thoroughly. Let the mixture sit for 5 minutes to allow the chia seeds to absorb the liquid and begin to thicken.
- Rewhisk the Pudding: After sitting, whisk the pudding again to break up any clumps of chia seeds to ensure a smooth texture throughout.
- Prepare the Crumble Topping: In a food processor, combine oats, walnuts, additional Medjool dates, and a pinch of salt. Pulse until the mixture is crumbly but well combined with some texture remaining.
- Sauté the Apples: Heat a skillet over medium-low heat and add diced apples, maple syrup, and cinnamon. Cook gently, stirring occasionally, until the apples soften and become tender, about 10-15 minutes. Remove from heat and let cool slightly.
- Assemble the Pudding Jars: In serving jars or bowls, layer the chia pudding base first, followed by a layer of sautéed apples, then a layer of the crumble topping. Repeat the layers until the jars are nearly full, leaving space for any drizzles or additional toppings.
- Storage: Seal the jars with lids and refrigerate. Consume within 3 to 4 days for best freshness and flavor.
Notes
- Miso paste is optional but adds a unique savory depth to the pudding.
- Vanilla extract enhances the flavor and can be added to the base during blending.
- Ensure to stir the chia pudding midway through sitting time if left longer to prevent clumping.
- The crumble topping can be toasted briefly in the skillet for extra crunch if desired.
- This pudding is best served chilled but can be enjoyed at room temperature as well.
- Adjust the sweetness by adding more or fewer Medjool dates or maple syrup based on preference.
