Instructions

  1. Prepare the Chia Pudding Base: In a blender, combine the soy yogurt, apple butter, Medjool dates, miso paste (if using), vanilla extract (approximately 1 tsp), cinnamon, cardamom, and soy milk. Blend until the mixture is smooth and creamy.
  2. Mix in Chia Seeds: Pour the blended mixture into a medium bowl and whisk in the chia seeds thoroughly. Let the mixture sit for 5 minutes to allow the chia seeds to absorb the liquid and begin to thicken.
  3. Rewhisk the Pudding: After sitting, whisk the pudding again to break up any clumps of chia seeds to ensure a smooth texture throughout.
  4. Prepare the Crumble Topping: In a food processor, combine oats, walnuts, additional Medjool dates, and a pinch of salt. Pulse until the mixture is crumbly but well combined with some texture remaining.
