Description

These Baked Blueberry Cottage Cheese Breakfast Bowls are a wholesome and delicious way to start your day. Made with cottage cheese, oats, bananas, and sweetened with maple syrup, they’re baked to golden perfection with juicy blueberries on top. Easy to prepare and perfect for meal prep, these bowls offer a creamy, protein-packed breakfast that’s both satisfying and nutritious.

Ingredients

Main Ingredients

  • 1.5 cups Cottage cheese
  • 4 large Eggs
  • 1 cup Rolled old-fashioned oats
  • 1 Banana
  • 1/3 cup Maple syrup
  • 1 tsp Baking soda
  • 1 cup Blueberries (fresh or frozen)

Instructions

  1. Preheat and prepare bowls: Preheat your oven to 350°F (175°C). Lightly spray two 2-cup glass bowls with non-stick spray and place them on a large baking sheet to catch any spills during baking.
  2. Blend the batter: In a high-powered blender, combine the cottage cheese, eggs, rolled oats, banana, maple syrup, and baking soda. Blend until the mixture is smooth and creamy. If the batter is too thick, add a small amount of milk to thin it out slightly for easier pouring.
  3. Fill bowls and add blueberries: Pour the batter evenly into the prepared bowls, filling them more than halfway. Top each bowl with blueberries. To prevent the blueberries from sinking, either use frozen berries or add them halfway through baking (about 15 minutes in).
  4. Bake: Place the baking sheet with the bowls in the oven and bake for 35 to 40 minutes. Depending on your oven, baking time can extend up to 45 minutes. The bowls are done when the tops are golden brown, puffed up, and feel firm to the touch.
  5. Cool and serve: Remove the bowls from the oven and allow them to cool for at least 10 minutes before eating. For meal prep, cover the bowls with lids or plastic wrap and refrigerate for up to one week.

Notes

  • Using frozen blueberries helps prevent them from sinking to the bottom.
  • If the batter is too thick, adding a little milk can help create a smoother consistency.
  • These bowls can be stored in the refrigerator for up to one week, making them ideal for meal prep.
  • The baking time may vary depending on your oven, so check for a golden brown top and firm texture to ensure doneness.
