Description
Baked Feta Potatoes combine crispy roasted potatoes with creamy, melty feta cheese for a comforting and flavorful side dish. Enhanced with garlic, lemon, honey, herbs, and chili flakes, this dish is easy to prepare yet impressive enough for any occasion.
Ingredients
2 large baking potatoes
1 (200g) block of feta
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried oregano
1 tsp salt
1 tsp black pepper
0.5 tsp red chili flakes
1 head of garlic, top cut off
1 lemon, quartered
1 tbsp honey
1/4 cup (20g) fresh basil
Instructions
- Preheat oven to 200°C (390°F).
- Wash and cube potatoes. Par-boil in a saucepan of water for 6–8 minutes. Drain and let steam dry for 2–3 minutes.
- Place potatoes in a baking dish. Toss with olive oil, thyme, oregano, salt, pepper, and chili flakes.
- Roast for 30–40 minutes, until golden and crispy.
- Add feta to the center of the dish. Squeeze over half a lemon. Roast for an additional 15 minutes.
- Remove garlic, squeeze cloves from skins, and mash. Set aside.
- Stir mashed garlic and remaining lemon juice into potatoes. Gently mix potatoes and feta together.
- Drizzle with honey and sprinkle with fresh basil before serving.
Notes
- Use rosemary or parsley instead of thyme/oregano for a different flavor.
- Add more chili flakes or cayenne for extra spice.
- Substitute feta with a vegan feta alternative for a plant-based version.
- Add cherry tomatoes or bell peppers for extra veggies.
- Par-boiling and steam drying potatoes ensures crispy edges.
