Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking dish with parchment paper, ensuring the paper covers the bottom and sides for easy removal later. Set aside.
- Mix Wet Ingredients: In a large mixing bowl, combine 2 cups of Greek yogurt, 4 large eggs, 1/4 cup maple syrup, and 1 teaspoon vanilla extract. Whisk thoroughly until the mixture is completely smooth and uniform.
- Add Cornstarch and Incorporate Berries: Add 3 tablespoons of cornstarch to the yogurt mixture and whisk again until fully blended and smooth. Gently fold in 1 cup of the berries with a few gentle stirs to distribute them evenly throughout the batter.
- Assemble for Baking: Pour the batter into the prepared baking dish, spreading evenly. Sprinkle the remaining 1/2 cup of berries evenly on top of the batter to add both visual appeal and bursts of flavor.
- Bake Until Set: Place the baking dish into the oven and bake for approximately 45 minutes. The baked yogurt is done when the center is set and no longer jiggly. It should have a custard-like firm texture.
