Description

This Baked Yogurt recipe is a creamy and naturally sweetened dessert made with Greek yogurt, eggs, and maple syrup, combined with fresh berries and baked to a perfect custard-like consistency. It’s a wholesome, easy-to-make treat that can be enjoyed warm or chilled.

Ingredients

Main Ingredients

  • 2 cups Greek yogurt
  • 4 large eggs
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1 1/2 cups berries (divided)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking dish with parchment paper, ensuring the paper covers the bottom and sides for easy removal later. Set aside.
  2. Mix Wet Ingredients: In a large mixing bowl, combine 2 cups of Greek yogurt, 4 large eggs, 1/4 cup maple syrup, and 1 teaspoon vanilla extract. Whisk thoroughly until the mixture is completely smooth and uniform.
  3. Add Cornstarch and Incorporate Berries: Add 3 tablespoons of cornstarch to the yogurt mixture and whisk again until fully blended and smooth. Gently fold in 1 cup of the berries with a few gentle stirs to distribute them evenly throughout the batter.
  4. Assemble for Baking: Pour the batter into the prepared baking dish, spreading evenly. Sprinkle the remaining 1/2 cup of berries evenly on top of the batter to add both visual appeal and bursts of flavor.
  5. Bake Until Set: Place the baking dish into the oven and bake for approximately 45 minutes. The baked yogurt is done when the center is set and no longer jiggly. It should have a custard-like firm texture.
  6. Cool and Serve: Remove from the oven and let it cool almost completely in the dish to allow it to set further. Once cooled, cut into 9 equal slices and serve as is or drizzle extra maple syrup over each portion for added sweetness.

Notes

  • To ensure the custard sets properly, do not open the oven door frequently during baking as it affects temperature consistency.
  • You can substitute maple syrup with honey or agave syrup for varying sweetness levels and flavor profiles.
  • Use any mix of fresh berries such as blueberries, raspberries, or strawberries for best results.
  • For a thicker texture, chill the baked yogurt in the refrigerator for at least an hour before serving.
  • Line the baking dish with parchment paper to avoid sticking and for an easy removal of the baked yogurt.
