Ingredients
Yogurt Mixture
- 1 cup (160 g) fresh blueberries
- 1 cup (230 g) Greek yogurt (nonfat or full fat)
- 1 to 2 tbsp maple syrup or honey (optional, to taste)
Chocolate Coating
- ¾ cup (125 g) melted dark chocolate
- 1 tsp coconut oil (optional, for melting chocolate)
Instructions
- Combine yogurt and blueberries: In a large bowl, stir the Greek yogurt with maple syrup or honey if desired to add sweetness. Then gently fold in the fresh blueberries, ensuring they are evenly distributed without crushing them.
- Freeze yogurt and blueberry clusters: Spoon out the yogurt and blueberry mixture and form small clusters. Place them on a parchment-lined baking sheet, spacing each cluster apart. Freeze for 1 to 2 hours or until the yogurt becomes firm to the touch.
- Melt chocolate: Melt the dark chocolate in the microwave using 30-second intervals, stirring in between until smooth. If needed, add 1 teaspoon of coconut oil to help with melting and achieve a glossy texture.
- Coat clusters in chocolate: Once the yogurt clusters are firm, remove them from the freezer. Dip each cluster carefully into the melted dark chocolate, coating them evenly. Place the coated clusters back onto the parchment-lined baking sheet.
- Freeze the coated clusters: Return the chocolate-coated clusters to the freezer and freeze for at least 30 minutes or until the chocolate sets completely. Store the finished clusters in an airtight container in the freezer until ready to enjoy.
