Description

This Burrata Bruschetta is a simple and elegant summer appetizer featuring creamy burrata cheese, marinated tomatoes, and crispy garlic-rubbed toasted bread. Perfect for entertaining or a gourmet snack.


Ingredients

2 cups baby tomatoes, quartered or chopped (e.g. cherry, grape or cocktail tomatoes)

1/4 cup chopped or torn fresh basil leaves

1 garlic clove, minced

1 tablespoon extra virgin olive oil

1 teaspoon balsamic vinegar

1/2 teaspoon dried oregano (optional)

Salt and freshly ground pepper, to taste

68 thick slices ciabatta, sourdough or other crusty bread (about ½¾ inch thick)

Olive oil, for brushing

1 garlic clove, cut in half

Salt and pepper, to taste

8 ounces (227 grams) burrata cheese, drained and patted dry

Balsamic glaze, for garnish

Additional drizzle of olive oil (optional)

Fresh basil leaves, for garnish

Flaky sea salt (like Maldon salt), for garnish


Instructions

  1. In a mixing bowl, combine chopped tomatoes, basil, minced garlic, olive oil, balsamic vinegar, oregano (if using), salt, and pepper. Toss well and let marinate.
  2. Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet, brush lightly with olive oil, season with salt and pepper, and bake for 10–15 minutes until golden and crisp. Alternatively, grill the bread.
  3. Once toasted, rub the warm bread with the cut side of a garlic clove for added flavor.
  4. Gently tear the burrata into large chunks and place on each toast. Spread the creamy center slightly with a spoon.
  5. Spoon the marinated tomato topping over the burrata, avoiding excess liquid to prevent sogginess.
  6. Finish with a drizzle of balsamic glaze, a touch of olive oil (optional), fresh basil leaves, and a sprinkle of flaky sea salt.
  7. Serve immediately for the best texture and flavor.

Burrata Bruschetta is best served fresh to maintain crisp texture.

You can prepare the tomato topping and toast the bread ahead of time.
