Instructions

  1. Prepare the popcorn: Place the 12 cups of popped popcorn in a large bowl, setting it aside while you prepare the caramel marshmallow mixture.
  2. Make the caramel base: In a large saucepan, combine the brown sugar, butter, and light corn syrup. Cook over medium heat, stirring constantly until the butter is completely melted and the mixture is smooth.
  3. Add marshmallows: Once the butter is melted, add the mini marshmallows to the saucepan. Continue cooking and stirring until all the marshmallows have completely melted into the caramel, creating a smooth, gooey mixture.
  4. Finish with vanilla: Remove the saucepan from heat and immediately stir in the teaspoon of vanilla extract for added flavor.
