- 2 large yellow onions, thinly sliced
- 2 tablespoons salted butter

Grilled Cheese Sandwich
- 8 ounces Gouda, Gruyère, or cheddar cheese, shredded
- 8 slices crusty bread
- 4 tablespoons salted butter, at room temperature (for toasting)
Instructions
- Caramelize Onions: In a large skillet over medium heat, add the thinly sliced onions, 2 tablespoons of salted butter, and 1 tablespoon of olive oil. Season with kosher salt and black pepper to taste. Cook the onions for 30-35 minutes, stirring every 5-7 minutes until they develop a rich, deep golden brown color.
- Deglaze and Combine: Once the onions are caramelized, add 1 tablespoon of white vinegar to the pan to deglaze it. Stir and cook for another 1-2 minutes until the vinegar evaporates. Remove the onions with a slotted spoon and place them in a bowl. Taste and adjust seasoning as needed. Mix the caramelized onions with the shredded cheese and set aside.
- Prepare Bread: Spread salted butter evenly on both sides of each slice of crusty bread. Heat the same skillet used for the onions over medium-low heat. Place several slices of bread in the pan and toast for about 1 minute until a light crust forms. Flip each slice to warm the other side slightly.
- Assemble and Grill: On the toasted side of each bread slice, pile on the onion and cheese mixture. Top with another slice of bread, pressing the toasted side against the cheese.
