Description

This Caramelized Onion Grilled Cheese is a delicious twist on the classic sandwich, featuring sweet, deeply caramelized onions combined with melted Gouda, Gruyère, or cheddar cheese on crusty bread. Perfectly toasted and buttery, it’s a comforting meal ideal for any time of day.

Ingredients

Caramelized Onions

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 tablespoon white vinegar

Grilled Cheese Sandwich

  • 8 ounces Gouda, Gruyère, or cheddar cheese, shredded
  • 8 slices crusty bread
  • 4 tablespoons salted butter, at room temperature (for toasting)

Instructions

  1. Caramelize Onions: In a large skillet over medium heat, add the thinly sliced onions, 2 tablespoons of salted butter, and 1 tablespoon of olive oil. Season with kosher salt and black pepper to taste. Cook the onions for 30-35 minutes, stirring every 5-7 minutes until they develop a rich, deep golden brown color.
  2. Deglaze and Combine: Once the onions are caramelized, add 1 tablespoon of white vinegar to the pan to deglaze it. Stir and cook for another 1-2 minutes until the vinegar evaporates. Remove the onions with a slotted spoon and place them in a bowl. Taste and adjust seasoning as needed. Mix the caramelized onions with the shredded cheese and set aside.
  3. Prepare Bread: Spread salted butter evenly on both sides of each slice of crusty bread. Heat the same skillet used for the onions over medium-low heat. Place several slices of bread in the pan and toast for about 1 minute until a light crust forms. Flip each slice to warm the other side slightly.
  4. Assemble and Grill: On the toasted side of each bread slice, pile on the onion and cheese mixture. Top with another slice of bread, pressing the toasted side against the cheese. Cook sandwiches for 2-3 minutes per side, pressing down gently with a spatula, until the bread is golden and crispy and the cheese has fully melted.
  5. Serve: Transfer the sandwiches to a cutting board, cut in half, and serve immediately while warm and gooey.

Notes

  • Use a mix of Swiss-style cheeses like Gouda or Gruyère for a nutty, creamy flavor, or cheddar for a sharper taste.
  • Make sure to cook the onions low and slow to achieve the best caramelization without burning.
  • Using a sturdy, crusty bread like sourdough holds up well during grilling.
  • Butter the bread generously for a rich, golden crust.
  • Serve with a simple green salad or tomato soup for a complete meal.
