Ingredients
Main Ingredients
- 2 cups cooked quinoa
- 2 eggs
- 1 cup shredded cheddar cheese
- 1/2 cup grated carrot
- 1 1/2 cups chopped broccoli
- 1/2 teaspoon salt (optional)
Instructions
- Preheat Oven: Set your oven to 350 degrees Fahrenheit (175 degrees Celsius) and allow it to fully preheat to ensure even baking of the quinoa bites.
- Prepare Vegetables: Using a blender or food processor, blend the chopped broccoli and grated carrot until finely chopped but not pureed, creating a uniform mixture that will incorporate well into the quinoa base.
- Mix Ingredients: In a large bowl, combine the finely chopped vegetables, cooked quinoa, eggs, shredded cheddar cheese, and salt (if using). Stir until the mixture is evenly mixed.
- Fill Muffin Tins: Spray two mini muffin tins with cooking spray to prevent sticking. Evenly divide the quinoa mixture into the muffin cups using a small cookie scoop or spoon. Press the mixture down firmly in each cup to ensure the bites hold together when baked.
- Bake: Place the muffin tins in the preheated oven and bake for 15 to 20 minutes, until the quinoa bites are lightly browned on top and set.
- Cool and Serve: Remove the muffin tins from the oven and allow the quinoa bites to cool for about 5 minutes before gently removing them and serving. Enjoy warm or at room temperature.
Notes
- You can omit salt if preparing for young children.

- Pressing the mixture firmly into the muffin cups helps them hold their shape after baking.
