Dough
- 1 pound pizza dough
Buffalo Chicken Filling
- 1 cup cooked shredded chicken
- 1/2 cup buffalo sauce (see notes for homemade sauce)
- 1/2 cup fresh cilantro or parsley, chopped
- 2 tablespoons chopped fresh chives
- 1 jalapeño, seeded and chopped
Cheeses
- 1 cup shredded whole milk mozzarella
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled blue cheese (optional)
- 1/2 cup grated parmesan or asiago cheese
Other Ingredients
- 1/2 cup ranch dressing (see notes for homemade ranch)
- 1 tablespoon sesame seeds
- 1 teaspoon Italian seasoning
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the Oven: Preheat your oven to 450°F and line a baking sheet with parchment paper to prepare for baking the strombolis.
- Prepare the Buffalo Chicken Filling: In a bowl, mix together the cooked shredded chicken, buffalo sauce, chopped cilantro or parsley, fresh chives, and seeded chopped jalapeño until well combined.
- Assemble the Strombolis: Divide the pizza dough into 4 equal balls. On a floured surface, roll each ball into an 8-inch circle or oval. Spread ranch dressing evenly over the dough, then layer with the buffalo chicken mixture. Top with mozzarella and cheddar cheese, and drizzle with additional buffalo sauce if desired. Fold in two sides of the dough and roll up tightly like a cinnamon roll. Pinch the edges to seal and place seam-side down on the prepared baking sheet.
- Add Toppings and Vent: In a small bowl, combine grated parmesan, sesame seeds, and Italian seasoning. Brush the top of each stromboli with beaten egg, then sprinkle the parmesan mixture evenly over them. Use a sharp knife to make two small slits in the top of each stromboli to allow steam to escape while baking.
- Bake: Bake in the preheated oven for 10 minutes, then reduce the temperature to 375°F and continue baking for an additional 20 to 30 minutes, or until the strombolis are golden brown and cooked through.

Notes
- Buffalo Sauce: To make homemade buffalo sauce, combine 1/2 cup hot sauce, 1/2 cup olive oil or melted butter, 1/2 teaspoon paprika, 1/2 teaspoon smoked paprika, 1/2 teaspoon each of onion powder, garlic powder, salt, and pepper in a glass jar or measuring cup. Mix well before using.
- Ranch Dressing: For homemade ranch, mix 1/2 cup plain Greek yogurt or sour cream, 2 tablespoons buttermilk, 2 tablespoons fresh chopped chives, 1 teaspoon dried parsley, 1 teaspoon dried dill, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and a pinch of kosher salt and black pepper in a glass jar or measuring cup.
- Blue cheese is optional and can be omitted or substituted based on preference.
- Make sure to seal the dough edges well to prevent filling from leaking during baking.
