Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400℉. Line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Steam Cauliflower: Bring a pot of water to a boil and place a steamer basket inside. Add the cauliflower florets and steam for 5 minutes until just tender. Transfer to a strainer and rinse under cold water to halt cooking. Drain thoroughly and press down with the back of a spoon to remove excess moisture.
- Process Cauliflower: Using a food processor fitted with an “S” blade, pulse cauliflower until finely chopped without pureeing it completely. Alternatively, finely chop by hand, pulse in a blender, or mash with a potato masher. The texture should remain slightly coarse.
- Drain Cauliflower Further: Place the processed cauliflower into a clean towel or paper towels, wrap it tightly, and press firmly to extract as much water as possible. This helps prevent soggy nuggets.
- Mix Ingredients: In a large bowl, combine the drained cauliflower with cooked rice, egg, egg white, garlic powder, onion powder, grated cheddar cheese, and salt. Mix everything thoroughly until evenly incorporated.
- Form Nuggets: Using a heaping tablespoon or small cookie scoop, portion out the mixture and shape each into a nugget with your hands. The mixture will be soft, but the final texture will be delicious regardless of perfect shape. Place each nugget on the prepared baking sheet.
- Bake Nuggets: Bake in the preheated oven for 7 minutes. Remove, flip each nugget, and gently press down to flatten slightly. Return to the oven and bake for an additional 7 minutes until golden and crisp.
