Description

Cheesy Mashed Potato Puffs are crispy, golden bites filled with creamy mashed potatoes and melted cheddar cheese. Perfect as a side dish, appetizer, or snack, these puffs combine a crunchy exterior with a soft, cheesy center for an irresistible comfort food treat.

Ingredients

For the Mashed Potatoes:

4 large russet potatoes (about 2 pounds), peeled and cut into chunks

4 tablespoons unsalted butter, room temperature

1/2 cup whole milk (or more for desired consistency)

1 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon garlic powder (optional)

For the Puffs:

1 1/2 cups shredded cheddar cheese

2 large eggs, beaten

1/2 cup breadcrumbs (panko preferred)

1/4 cup finely chopped green onions (optional)

1/2 teaspoon paprika (optional)

1/4 teaspoon dried parsley (optional)

Cooking spray or melted butter (for greasing)

Instructions

  1. Place potatoes in a pot of water, bring to a boil, and cook until tender (about 15 minutes).
  2. Drain and mash potatoes with butter, milk, salt, pepper, and garlic powder (if using) until smooth. Let cool to room temperature.
  3. Preheat oven to 375°F (190°C). Line and grease a baking sheet with parchment paper.
  4. In a large bowl, mix cooled mashed potatoes with cheddar cheese, eggs, breadcrumbs, and green onions (if using).
  5. Scoop spoonfuls of mixture, shape into small puffs, and place on baking sheet.
  6. Lightly brush or spray puffs with melted butter or cooking spray.
  7. Bake for 20-25 minutes until golden brown and crispy.
  8. Let cool slightly before serving. Garnish with paprika, parsley, or extra green onions if desired.

Notes

  • Use panko breadcrumbs for maximum crispiness.
  • Make ahead by refrigerating unbaked puffs for up to 24 hours before baking.
  • For a gluten-free version, use gluten-free breadcrumbs.
  • To freeze, place unbaked puffs on a baking sheet, freeze, then store in a freezer-safe bag. Bake from frozen at 375°F for 25-30 minutes.
  • Experiment with cheeses like mozzarella, gouda, or pepper jack for unique flavors.
