  2. Cook the Chicken: Heat a skillet over medium-high heat and add the chicken. Cook for 3-4 minutes on the first side and 3 minutes on the second side until the internal temperature reaches 165℉, ensuring the chicken is fully cooked.
  3. Rest and Dice: Remove the chicken from the skillet and let it rest for 5 minutes to retain juices, then dice into very small pieces.
  4. Prepare the Dressing: In a bowl, whisk together mayonnaise, Dijon mustard, lemon juice, diced celery, diced red onion, and a pinch of black pepper. Add the diced chicken and mix gently until coated with the creamy dressing.
