Description

Ingredients

Proteins and Cheese

  • 8 oz. Chicken Breasts or Chicken Thighs (boneless, trimmed of excess fat)
  • 4 slices Provolone Cheese
  • 2 Sausage Rolls

Vegetables

  • 1/2 medium Red Bell Pepper
  • 1/2 medium Green Bell Pepper
  • 1/2 large Onion

Seasonings and Oils

  • 2 tbsp. Avocado Oil (divided)
  • Salt & Pepper, to taste
  • 1/2 tsp. Garlic Powder (divided: 1/4 tsp for chicken, remaining for vegetables)
  • 1 tsp. Italian Seasoning


Instructions

  1. Season the Chicken: Season the chicken breasts or thighs all over with salt, pepper, and 1/4 teaspoon garlic powder. Let the chicken rest at room temperature while you prepare the other ingredients.
  2. Slice Vegetables: Thinly slice the red and green bell peppers and the onion. Set them aside for cooking.
  3. Cook Chicken: Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Cook the seasoned chicken for 3 to 4 minutes per side, or until fully cooked through. Remove the chicken from the skillet and place it on a cutting board; tent with foil to keep warm.
  4. Sauté Vegetables: Add the remaining tablespoon of oil to the same skillet. Add the sliced bell peppers, onions, the remaining garlic powder, Italian seasoning, and a pinch of salt and pepper. Increase the heat to medium-high and cook the vegetables until tender and slightly charred, about 6 to 8 minutes. Then reduce the heat to medium.
  5. Slice Chicken: Thinly slice the cooked chicken into strips and stir them into the skillet with the cooked vegetables, combining the flavors.
  6. Layer Cheese: Divide the chicken and vegetable mixture into two separate portions in the skillet, shaping them to roughly match the shape of the sausage rolls. Place two slices of provolone cheese on top of each portion and let it melt over the chicken and vegetables.
  7. Warm Rolls and Assemble: Warm the sausage rolls in the microwave for about 20 seconds until soft and warm. Scoop one pile of the chicken, vegetable, and melted cheese mixture into a warmed sausage roll. Repeat with the second sandwich. Serve hot and enjoy!
