Ingredients
4 boneless, skinless chicken breasts (about 1.5 lbs)
2 ripe peaches, sliced
3 garlic cloves, minced
2 tbsp extra virgin olive oil
¼ cup balsamic vinegar
2 tbsp honey
Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear each side for 4–5 minutes until golden brown.
- Remove chicken from skillet and set aside. Add sliced peaches and garlic to the skillet and sauté for 2–3 minutes until fragrant.
- Mix balsamic vinegar and honey in a small bowl, then pour over the peaches. Stir well.
- Return chicken to the skillet, spooning sauce over the chicken. Transfer everything into an oven-safe dish.
- Bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Serve warm, drizzled with the peach sauce.
