A healthy, no-bake chickpea ‘cookie dough’ made with peanut butter, maple syrup, and vegan chocolate chips. Perfect as a quick, sweet snack or dessert that’s vegan, gluten-free, and ready in just 15 minutes.
Ingredients
1 (15 ounce) can chickpeas, drained
½ cup peanut butter
½ cup pure maple syrup, or to taste
3 tablespoons all-purpose flour (use gluten-free if needed)
½ teaspoon vanilla extract
⅛ teaspoon salt
½ cup vegan chocolate chips
2 tablespoons peanuts
Instructions
- Combine chickpeas, peanut butter, maple syrup, flour, vanilla extract, and salt in a food processor or blender.
- Blend until smooth and creamy.
- Transfer mixture into a bowl.
- Stir in chocolate chips and peanuts.
- Scoop dough and roll into balls.
- If too sticky, refrigerate for 10–15 minutes before rolling.
- Enjoy immediately or store in an airtight container in the refrigerator.
Notes
- Use almond butter or sunflower seed butter instead of peanut butter for variation.
