Description

Delight in these Chocolate Cake Baked Protein Donut Holes—a low-sugar, high-protein treat made with coconut flour, vanilla protein powder, and Greek yogurt. Baked to perfection, these donut holes offer a guilt-free indulgence with rich chocolate flavor and a soft, moist texture, perfect for a snack or breakfast on the go.

Ingredients

Dry Ingredients

  • 1/4 cup (28g) Coconut Flour
  • 1 scoop (31g) Vanilla Protein Powder
  • 2 tbsp (10g) Unsweetened Dark Cocoa Powder
  • 2 1/2 tbsp (22g) Sugar Free Chocolate Fudge Pudding Mix
  • 1 tbsp (9g) Swerve Confectioners (or powdered erythritol)

Wet Ingredients

  • 1/2 cup (113g) Vanilla Fat Free Greek Yogurt
  • 1 Egg
  • 1-2 tbsp (9-18g) Swerve Confectioners (for rolling)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine coconut flour, vanilla protein powder, unsweetened cocoa powder, sugar-free chocolate fudge pudding mix, and 1 tablespoon of Swerve Confectioners. Stir thoroughly to blend all dry components evenly.
  3. Add Wet Ingredients and Form Dough: Add the vanilla fat free Greek yogurt and egg to the dry mixture. Use a rubber spatula to stir and fold the ingredients together until a giant ball of dough forms, ensuring no dry patches remain.
  4. Shape Donut Holes: Pinch off 8 equal portions of the dough and place them onto the prepared baking sheet. If the dough sticks to your hands, lightly spray them with cooking spray and roll each portion into smooth balls.
  5. Bake: Place the baking sheet in the oven and bake the donut holes for 14 to 16 minutes, or until they are cooked through and a toothpick inserted in the center comes out clean.
  6. Cool and Coat: Let the donut holes cool slightly on the baking sheet, then roll them in the additional 1-2 tablespoons of Swerve Confectioners to add a light powdered sugar coating for extra sweetness.

Notes

  • Ensure to spray your hands lightly with cooking spray when rolling the dough balls if they are sticky to avoid mess.
  • You can substitute vanilla protein powder with unflavored or chocolate protein powder for a flavor variation.
  • These donut holes are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a nut-free version, confirm that pudding mix and protein powder are nut-free.
  • Adjust the sweetness to your taste preference by using more or less Swerve when rolling the donut holes.
