Description

This classic chicken salad combines tender chicken with creamy mayo, crunchy celery, and tangy mustard. Perfect for sandwiches, lettuce wraps, or on its own, it’s an easy, customizable, and protein-packed meal prep favorite.


Ingredients

3 cups cooked chicken, chopped or shredded

1/2 cup mayonnaise

1 tbsp Dijon mustard (or yellow)

1/2 cup celery, finely chopped

1/4 cup red onion, diced

1 tbsp fresh lemon juice

Salt & pepper to taste

Optional: 1 tbsp fresh dill or parsley

Optional: 1/4 cup sliced grapes or chopped apples

Optional: 1/4 cup chopped nuts


Instructions

  1. In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  2. Add the chopped or shredded chicken, celery, red onion, and any optional add-ins like herbs, fruit, or nuts.
  3. Stir the mixture until everything is evenly coated and well combined.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled as a sandwich filling, in a lettuce wrap, or on its own.

Notes

Swap mayo for Greek yogurt for a lighter version.
