Description

A quick and easy Cottage Cheese Queso recipe that blends creamy cottage cheese with cheddar cheese and taco seasoning, melted to perfection in the microwave. Perfect for a delicious and healthy dip served with tortilla chips or your favorite Mexican sides.

Ingredients

Cheese Base

  • 1 cup cottage cheese
  • 1/2 cup cheddar cheese, shredded

Seasoning

  • 1/2 teaspoon taco seasoning

Optional Garnish

  • Pico de gallo
  • Salsa
  • Cilantro

Instructions

  1. Blend Cottage Cheese: Add 1 cup of cottage cheese to a blender, preferably a single-serve blender for ease, and blend until the mixture is smooth and creamy to create the queso base.
  2. Combine Ingredients: Transfer the blended cottage cheese into a microwave-safe bowl. Evenly sprinkle 1/2 cup shredded cheddar cheese and 1/2 teaspoon taco seasoning on top.
  3. Initial Microwave: Place the bowl in the microwave and heat on high for 1 minute to begin melting the cheese.
  4. Stir and Repeat Cooking: Stir the mixture thoroughly. Return it to the microwave and cook for another 30 seconds. Stir again. Continue microwaving in 30-second intervals, stirring each time until the queso becomes smooth, creamy, and well combined. This process should take approximately 2 minutes total, depending on your microwave’s power.
  5. Optional Garnish and Serve: If desired, garnish the queso with pico de gallo, salsa, or fresh cilantro before serving. Enjoy warm with tortilla chips.

Notes

  • Cooking times may vary depending on microwave wattage; keep an eye on the queso to avoid overheating.
  • Use freshly shredded cheddar cheese for best melting results.
  • For a spicier kick, add extra taco seasoning or a pinch of cayenne pepper.
  • Serve immediately for the best creamy texture.
  • This dip pairs well with tortilla chips, fresh vegetables, or as a sauce for Mexican dishes.
