Description

Delicious and easy-to-make Cowboy Butter Chicken Skewers featuring tender, juicy chicken cubes marinated with olive oil, salt, and pepper, air fried to perfection, and brushed with flavorful melted cowboy butter. Perfect for a quick and satisfying appetizer or main dish.

Ingredients

Chicken Skewers

  • 8 wooden skewers (soaked in water for 30 minutes)
  • 2 boneless skinless chicken breasts (about 1 pound), cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Cowboy Butter

  • ½ cup cowboy butter, melted
  • Fresh parsley, chopped for garnish

Instructions

  1. Prepare the Chicken: In a large bowl, toss the cubed chicken breasts with extra virgin olive oil, kosher salt, and black pepper until well coated.
  2. Thread the Chicken: Take one soaked wooden skewer at a time and thread 4-5 chicken cubes onto each skewer, leaving small spaces between pieces for even cooking.
  3. Preheat Air Fryer: Preheat your air fryer to 400°F (204°C) to ensure optimal cooking temperature.
  4. Air Fry the Skewers: Place the chicken skewers in the air fryer basket in a single layer. Cook at 400°F for 11-12 minutes, flipping the skewers halfway through to ensure even browning and thorough cooking. The internal temperature of the chicken should reach 165°F (74°C) for safety.
  5. Serve and Garnish: Carefully remove the cooked chicken skewers from the air fryer and place them on a serving platter. Generously brush or drizzle the melted cowboy butter over the hot skewers and garnish with chopped fresh parsley for a burst of color and flavor.

Notes

  • Soaking wooden skewers before grilling prevents them from burning in the air fryer.
  • Check the chicken’s internal temperature with a meat thermometer to ensure safety and optimal juiciness.
  • Cowboy butter can be prepared ahead and melted just before use.
  • You can double the recipe easily for larger gatherings.
  • If you don’t have an air fryer, this recipe can also be grilled or baked with adjustments to cooking time.
