Description
A wholesome and customizable rice bowl featuring tender chicken, fluffy jasmine or basmati rice, and a creamy avocado sauce. Perfect for a balanced, satisfying meal that can be tailored with fresh toppings and add-ons.
Ingredients
1 cup uncooked rice (Jasmine or basmati)
2 boneless, skinless chicken breasts (about 1 pound total)
2 ripe avocados
1 tablespoon olive oil (extra virgin preferred)
1 lime (juice)
Salt and pepper to taste
1 teaspoon garlic powder (or fresh minced garlic)
1 teaspoon paprika
Fresh cilantro (for garnish, optional)
Optional add-ons: cherry tomatoes (halved), black beans, corn (fresh or canned), shredded cheese (cheddar or feta), hot sauce
Instructions
- Rinse the rice under cold water until the water runs clear. Combine with 2 cups of water and a pinch of salt in a pot. Bring to a boil, reduce to low, cover, and simmer for 15–20 minutes until water is absorbed. Remove from heat and let sit for 5 minutes, then fluff with a fork.
- Season chicken breasts with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium heat. Cook chicken for 6–7 minutes per side until golden brown and internal temperature reaches 165°F. Rest, then slice into bite-sized pieces.
- In a blender or food processor, combine avocados, lime juice, a pinch of salt, and a splash of water. Blend until smooth and creamy, adding more water if needed for consistency.
- Assemble the bowls: place rice at the bottom, add sliced chicken, drizzle with creamy avocado sauce, and top with optional add-ons. Garnish with fresh cilantro if desired.
Notes
Brown rice can be used, but will require 40–45 minutes to cook.
For a vegan option, replace chicken with grilled tofu or tempeh.
Store rice, chicken, and avocado sauce separately in the fridge for up to 3 days.
If avocado sauce thickens after refrigeration, loosen with water or lime juice.
Avocado sauce is best fresh and does not freeze well.
