Description

A wholesome and customizable rice bowl featuring tender chicken, fluffy jasmine or basmati rice, and a creamy avocado sauce. Perfect for a balanced, satisfying meal that can be tailored with fresh toppings and add-ons.


Ingredients

1 cup uncooked rice (Jasmine or basmati)

2 boneless, skinless chicken breasts (about 1 pound total)

2 ripe avocados

1 tablespoon olive oil (extra virgin preferred)

1 lime (juice)

Salt and pepper to taste

1 teaspoon garlic powder (or fresh minced garlic)

1 teaspoon paprika

Fresh cilantro (for garnish, optional)

Optional add-ons: cherry tomatoes (halved), black beans, corn (fresh or canned), shredded cheese (cheddar or feta), hot sauce


Instructions

  1. Rinse the rice under cold water until the water runs clear. Combine with 2 cups of water and a pinch of salt in a pot. Bring to a boil, reduce to low, cover, and simmer for 15–20 minutes until water is absorbed. Remove from heat and let sit for 5 minutes, then fluff with a fork.
  2. Season chicken breasts with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium heat. Cook chicken for 6–7 minutes per side until golden brown and internal temperature reaches 165°F. Rest, then slice into bite-sized pieces.
  3. In a blender or food processor, combine avocados, lime juice, a pinch of salt, and a splash of water. Blend until smooth and creamy, adding more water if needed for consistency.
  4. Assemble the bowls: place rice at the bottom, add sliced chicken, drizzle with creamy avocado sauce, and top with optional add-ons. Garnish with fresh cilantro if desired.

Notes

Brown rice can be used, but will require 40–45 minutes to cook.

For a vegan option, replace chicken with grilled tofu or tempeh.

Store rice, chicken, and avocado sauce separately in the fridge for up to 3 days.

If avocado sauce thickens after refrigeration, loosen with water or lime juice.

Avocado sauce is best fresh and does not freeze well.
