Ingredients
Chicken
- 4 pieces chicken cutlets, thinly sliced
- Salt, to taste
- Black pepper, to taste
- Vegetable oil, for frying
- 4 tbsp all-purpose flour (divided)
Sauce
- 2 tbsp butter
- 4 cloves garlic, smashed
- 1 cup half and half
- 1/4 cup chicken broth
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups fresh spinach
Instructions
- Season and Coat Chicken: Season the chicken cutlets lightly with salt and black pepper on both sides, then coat each side with 2 tablespoons of all-purpose flour evenly.
- Sear Chicken: Heat a large skillet over medium-high heat and add vegetable oil. Place the chicken cutlets in the skillet without overlapping. Sear on one side until slightly browned, then flip and sear the other side until the internal temperature reaches 165°F. Remove chicken from the skillet to avoid overcooking.
- Prepare Sauce Base: Lower the heat to medium and add butter and smashed garlic to the skillet. Cook until the garlic is fragrant, being careful not to burn it.
- Make Creamy Sauce: Add 2 tablespoons of flour to the butter and garlic, stirring constantly to dissolve the flour. Gradually pour in half and half and chicken broth while stirring. Bring the sauce to a boil and let it thicken.
- Add Spinach to Sauce: Once the sauce has thickened, fold in the fresh spinach and stir until the spinach wilts and is evenly incorporated into the sauce.
- Combine Chicken and Sauce: Return the chicken cutlets to the skillet, coating each piece thoroughly with the creamy spinach sauce. Remove from heat promptly—do not let the chicken sit in the sauce for more than a minute to maintain texture.
- Serve: Plate the creamy spinach chicken immediately and enjoy the comforting flavors.
Notes
- Note 1: Ensure chicken cutlets are thinly sliced for even cooking and quick searing.
- Use a meat thermometer to check that chicken reaches 165°F for safe consumption without overcooking.
- For a thicker sauce, reduce the amount of chicken broth or simmer sauce slightly longer.
- You can substitute half and half with heavy cream for a richer sauce or whole milk for a lighter option.
- Fresh spinach is preferred for better texture and flavor, but frozen spinach can be used if well-drained.
