Instructions
- Boil the carrots: Place the peeled and cut carrots into a medium-sized saucepan, cover with water, and bring to a boil over medium-high heat. Cook the carrots for about 10 minutes or until fork tender, ensuring they are soft enough to smash but not overcooked.
- Drain and cool: Drain the cooked carrots thoroughly and allow them to cool slightly to handle safely.
- Preheat oven and prepare baking sheet: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and promote even roasting.
- Toss carrots with seasoning: In a medium bowl, combine the cooled carrots with grated parmesan cheese, olive oil, garlic powder, salt, and coarse ground pepper. Stir well until each piece is evenly coated with the seasoning mixture.
