Description

A revitalizing green detox juice made with celery, fennel, and spinach, enhanced with lemon and ginger for digestive and cleansing benefits. Perfect for a morning boost or gentle reset, this juice is hydrating, anti-inflammatory, and nutrient-rich.


Ingredients

1 large bunch celery (about 10-12 stalks)

1 medium fennel bulb, fronds reserved

5 ounces (about 140g) fresh spinach

1 green apple, such as Granny Smith or Honeycrisp (optional)

1/2 lemon, peeled

1-inch piece of ginger, peeled

1/2 cup filtered water (optional, for consistency)

Optional: a few sprigs of parsley or cilantro

Optional: a small piece of cucumber

Optional: a pinch of cayenne pepper


Instructions

  1. Wash all produce thoroughly using a vegetable brush.
  2. Cut off the base of the celery, separate the stalks, and chop into 2-3 inch pieces.
  3. Trim fennel stalks, reserve fronds, cut the bulb into quarters, remove the core, and chop.
  4. Rinse spinach well under cold water; roughly chop if preferred.
  5. If using apple, wash, core, peel (optional), and chop into quarters.
  6. Peel the lemon and cut into small pieces.
  7. Peel and slice the ginger thinly.
  8. Prepare your juicer according to manufacturer’s instructions.
  9. Juice the ingredients in this order: celery, fennel (with fronds), spinach, apple (if using), lemon, and ginger.
  10. If juice is too thick, add a little filtered water while juicing.
  11. Check the pulp; if too wet, adjust juicer speed or method.
  12. Taste and adjust flavor as needed (add more apple, lemon, or cayenne).
  13. Strain juice if a smoother consistency is desired.
  14. Serve immediately over ice if preferred; garnish with lemon, parsley, or fennel fronds.

Notes

Best consumed immediately for optimal nutrients.

Can be stored in an airtight glass container in the fridge for up to 24 hours.

Shake well before drinking as natural separation may occur.

Freeze leftover juice in ice cube trays for future smoothies.

To make without a juicer, blend all ingredients and strain through a nut milk bag.
