Ingredients

Pasta

  • 4 ounces uncooked spaghetti pasta

Sauce

  • 2 tablespoons olive oil
  • 2 large cloves garlic, minced
  • 1 (5 ounce) can tuna, drained (preferably tuna packed in oil)
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste

Optional

  • Freshly grated parmesan cheese
  • Lemon zest


Instructions

  1. Cook Pasta: Boil a salted pot of water and cook the spaghetti pasta al dente according to package directions. While the pasta cooks, prepare the other ingredients.
  2. Prepare Garlic Oil: When the pasta is almost ready, heat olive oil in a small pan over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  3. Add Tuna and Flavorings: Stir in the drained tuna, lemon juice, and chopped parsley into the pan. Heat through gently for a minute or two to combine flavors.
  4. Combine and Serve: Once the pasta is done, reserve a couple of tablespoons of pasta water. Add this pasta water to the tuna sauce, then drain the pasta. Toss the drained pasta in the sauce until well coated. Season with salt and pepper to taste.
