  • ¼ cup heavy cream
  • 2 tablespoons espresso powder
  • 2 cups heavy cream (extra, cold)


Instructions

  1. Prepare Egg Mixture: Place the egg yolks and sugar in a double boiler or heatproof bowl set over gently simmering water. Whisk constantly for about 3 minutes until the mixture is thickened and creamy.
  2. Add Espresso and Cream: Stir in ¼ cup heavy cream and espresso powder to the egg and sugar mixture while continuing to whisk until the mixture thickens further and the espresso powder dissolves completely.
  3. Cool the Mixture: Remove the bowl from the heat and transfer the mixture to the refrigerator. Chill it for about 30 minutes to cool and set slightly.
  4. Whip Heavy Cream: In a separate large bowl, whip the remaining 2 cups of cold heavy cream with an electric mixer or whisk until stiff peaks form.
  5. Combine Mixtures: Gently fold the chilled espresso mixture into the whipped cream and continue beating until the mousse is smooth, fully incorporated, and fluffy.
  6. Serve: Divide the mousse evenly among 6 small serving glasses, mugs, or ramekins. Serve immediately or refrigerate to let it firm up more if desired before serving.

  • Use espresso powder for the best intense coffee flavor; instant coffee powder can be a substitute but may alter taste slightly.
  • If you don’t have a double boiler, use a heatproof bowl over a saucepan of simmering water to gently heat the egg mixture without direct heat.
  • Mousse can be prepared ahead and kept refrigerated for a few hours to develop a richer texture.
