Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and place the oven rack in the middle position to ensure even cooking of the casserole.
- Cook Ground Beef: In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add 1 pound of lean ground beef and cook for about 5 minutes, breaking up the meat with a spoon until browned and cooked through.
- Add Seasonings and Onion: Stir in 1/2 medium chopped onion, 1 tablespoon chili powder, 1/2 teaspoon garlic powder, and 1/2 teaspoon ground cumin. Continue cooking for another 5 minutes until the onion softens and flavors meld.
- Prepare Casserole Base: Evenly spread 2 cups of crushed Nacho Cheese Doritos in the bottom of a 9×13 (or similar size) casserole dish to create a crunchy base layer.
- Combine Beans, Corn, Salsa, and Cheese: If excess fat is in the skillet with the beef mixture, spoon most of it out. Then stir in 1 (14 oz) can drained and rinsed black beans, 1 (12 oz) can drained corn, 1 (15.5 oz) jar salsa, and half of the shredded cheese (1 cup).
