Instructions
- Prepare the Ingredients: Start by roughly chopping the cilantro, jalapeño peppers (de-seeded for less heat), and garlic cloves to make them easier to process.
- Pulse the Base: Add the chopped cilantro, jalapeños, garlic, ground cumin, ground coriander, ground cardamom, sea salt, black pepper, lemon juice, and a pinch of sugar into the bowl of a food processor. Pulse a few times until the mixture is chunky and uniform in size, letting small cilantro stems remain for extra texture.
- Add Olive Oil: Pour in the olive oil and blend the mixture until you reach your desired sauce consistency. If the sauce feels too thick, you can add more olive oil or a bit of water to loosen it, scraping down the sides of the processor as needed for an even blend.
