Ingredients
For the Marinade:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon dried oregano
1 tablespoon dried basil
Pinch salt
Pinch pepper
For the Salad:
1 cucumber, peeled, fork-scored, thinly sliced, and diced
1½ cups cherry tomatoes, quartered
8 oz fresh mozzarella
½ large red onion, chopped
Optional: fresh basil leaves
Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Set aside to let flavors meld.
- Prepare the cucumber by peeling, fork-scoring, slicing thinly, and dicing into small pieces. Place in a medium bowl.
- Add quartered cherry tomatoes to the cucumber.
- Chop the red onion into small pieces and add to the bowl.
- Cut mozzarella into bite-sized pieces or use mozzarella balls. Add to the salad mixture.
- Pour the marinade over the salad and toss until evenly coated.
- Let sit for about 10 minutes before serving to allow flavors to develop.
Notes
- Add grilled chicken, shrimp, or chickpeas for extra protein.
- Substitute mozzarella with feta or goat cheese for a different flavor.
- Top with toasted pine nuts or walnuts for added crunch.
