Description

Fresh Cucumber Caprese Salad is a light, refreshing dish made with crisp cucumbers, juicy cherry tomatoes, creamy mozzarella, and a tangy balsamic-herb marinade. Perfect as a side dish or a light meal, this salad comes together quickly and is full of fresh, vibrant flavors.


Ingredients

For the Marinade:

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon dried oregano

1 tablespoon dried basil

Pinch salt

Pinch pepper

For the Salad:

1 cucumber, peeled, fork-scored, thinly sliced, and diced

1½ cups cherry tomatoes, quartered

8 oz fresh mozzarella

½ large red onion, chopped

Optional: fresh basil leaves


Instructions

  1. In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper. Set aside to let flavors meld.
  2. Prepare the cucumber by peeling, fork-scoring, slicing thinly, and dicing into small pieces. Place in a medium bowl.
  3. Add quartered cherry tomatoes to the cucumber.
  4. Chop the red onion into small pieces and add to the bowl.
  5. Cut mozzarella into bite-sized pieces or use mozzarella balls. Add to the salad mixture.
  6. Pour the marinade over the salad and toss until evenly coated.
  7. Let sit for about 10 minutes before serving to allow flavors to develop.

Notes

  • Add grilled chicken, shrimp, or chickpeas for extra protein.
  • Substitute mozzarella with feta or goat cheese for a different flavor.
  • Top with toasted pine nuts or walnuts for added crunch.
  • For a vegan version, skip mozzarella or use a plant-based cheese substitute.
