Description

Tender beef stew meat and baby potatoes slow-cooked in a rich garlic butter sauce for a comforting and flavorful meal perfect for family dinners or gatherings.


Ingredients

1.5 pounds beef stew meat, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

0.5 teaspoon dried thyme

0.5 teaspoon dried rosemary

0.5 teaspoon salt, or to taste

0.25 teaspoon black pepper

0.25 cup beef broth

1 tablespoon olive oil


Instructions

  1. Cut the beef into bite-sized pieces and halve the baby potatoes.
  2. (Optional) Parboil the potatoes for a few minutes to soften slightly.
  3. Heat olive oil in a skillet over medium-high heat and sear the beef bites until browned on all sides.
  4. In a small bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper to make the garlic butter sauce.
  5. Add the halved potatoes and seared beef to the slow cooker. Pour in the garlic butter sauce and beef broth.
  6. Cover and cook on low for 6–8 hours or on high for 3–4 hours until beef is fork-tender.
  7. Let rest for 10 minutes before serving.
