Description

This Goat Cheese Grilled Cheese with Honey and Red Pepper Flakes offers a unique twist on the classic grilled cheese sandwich. The melty combination of crumbly goat cheese and shredded white cheddar is perfectly balanced by the sweetness of honey and a subtle kick of red pepper flakes infused in butter. Crispy golden bread with gooey cheese and a touch of spice makes this sandwich irresistible and bursting with flavor.

Ingredients

Bread

  • 2 slices thick, good quality white bread (crusty French loaf recommended)

Cheese

  • 2 oz goat cheese, crumbled
  • 2 oz white cheddar, shredded (can substitute shredded mozzarella)

Other Ingredients

  • 2 tablespoons liquid honey, divided
  • 3 tablespoons butter, melted
  • ⅛ teaspoon red pepper flakes (adjust to taste)

Instructions

  1. Infuse Butter: Melt the butter in a large saucepan over medium-low heat with the red pepper flakes to infuse the butter with their spicy flavor. Cook carefully for about five minutes, ensuring the butter does not burn.
  2. Prepare for Cooking: Carefully transfer the melted, infused butter to a small bowl. Don’t clean the pan as it will be used for grilling the sandwich.
  3. Butter the Bread: Using a pastry brush or the back of a spoon, spread the melted butter on one side of both slices of bread. You may not need all the butter.
  4. Assemble Sandwich: Heat the pan again over medium heat. Place one slice of buttered bread butter-side down on the pan. Evenly spread the crumbled goat cheese and shredded cheddar over the bread, then drizzle one tablespoon of honey on top. Place the second slice of bread on top, butter side out, to form a sandwich.
  5. Grill Sandwich: Cover the pan with a lid to help the cheese melt more evenly. Cook for 5-7 minutes or until the bottom of the bread is toasted golden brown and the cheese inside has melted.
  6. Finish and Serve: Remove the sandwich from the pan. Drizzle the remaining tablespoon of honey on top of the sandwich. If desired, sprinkle extra red pepper flakes remaining in the pan on top. Slice, serve warm, and enjoy!

Notes

  • Use a crusty French loaf or other sturdy white bread to hold the fillings well and achieve a crispy crust.
  • You can substitute shredded mozzarella for the white cheddar if preferred.
  • Adjust the amount of red pepper flakes to control the level of spiciness.
  • Covering the pan while grilling helps melt the cheese thoroughly without burning the bread.
  • For extra flavor, allow the butter to fully infuse with the red pepper flakes but watch carefully to avoid burning.
