Description

Greek Potatoes are a classic Mediterranean side dish made with lemon, garlic, oregano, and olive oil, roasted to perfection for crispy edges and a soft, creamy interior. They’re a flavorful, versatile, and crowd-pleasing addition to any meal.


Ingredients

2 ½ lbs baking potatoes, peeled and cut into eighths

1 ½ cups chicken broth

½ cup olive oil

¼ cup lemon juice

3 cloves garlic, minced

1 tbsp dried oregano (or 23 tbsp fresh oregano)

1 tsp salt

Fresh ground pepper, to taste

Sprinkle of paprika (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel potatoes and cut them into thick wedges. Rinse well and drain.
  3. In a 13×9-inch baking dish, mix chicken broth, olive oil, lemon juice, garlic, oregano, salt, and pepper.
  4. Add potatoes to the dish and stir to coat with the mixture.
  5. Bake uncovered for 1 ½ hours, testing with a fork for tenderness. If needed, cook for an additional 15 minutes.
  6. Let the dish sit for 10 minutes before serving.

  • For a vegan version, substitute chicken broth with vegetable broth.
