- Mix the Base: In a medium bowl, thoroughly stir together the Greek yogurt, peanut butter, vanilla protein powder, your choice of maple syrup or honey, and vanilla paste until the mixture is smooth and creamy, ensuring all ingredients are fully incorporated.
- Spread the Mixture: Line a quarter sheet pan with parchment paper. Using an offset spatula, spread the yogurt mixture evenly over the pan, aiming for a thickness between 1/4 inch and 1/2 inch, based on your preference. If a quarter sheet pan is not available, a 9×13 inch baking pan can be used, though spreading evenly may be more challenging.
- Melt Chocolate: Place the dark chocolate chips in a microwave-safe bowl and microwave in 30-second intervals, stirring between each, until the chocolate is fully melted but not overheated to prevent burning.
- Top and Freeze: Evenly spread the melted dark chocolate over the prepared yogurt and peanut butter layer. Transfer the pan to the freezer and allow it to freeze for at least 2 to 3 hours until firm.
- Serve: Once completely frozen, optionally sprinkle flaked sea salt over the bark. Cut into pieces with a sharp knife or break apart by hand. Enjoy immediately as a refreshing, protein-packed snack or dessert.
