  • 1 cup / 120 grams Unbleached White All-Purpose Flour, plus 1-2 TBLS for dusting work surface
  • ½ cup / 142.5 grams Greek Yogurt (use thick Greek Yogurt, not Greek Style Yogurt)
  • ½ TSP Fine Sea Salt
  • 1 TSP / 5 grams Baking Powder
  • ½ TSP Extra Virgin Olive Oil

Optional Seasonings/Herbs

  • Garlic powder
  • Onion powder
  • Crushed red chili pepper flakes
  • Dried mint
  • Dried basil
  • Oregano

Toppings

  • 3-4 TBLS Pizza Sauce (store-bought or homemade)
  • ¾-1 cup Shredded Italian Blend or Mozzarella Cheese (Italian Blend: low-moisture mozzarella and parmesan)
  • 1 TSP Olive Oil, for brushing baking tray
  • Optional toppings: sliced red or yellow onion, jalapeños, banana peppers, artichoke hearts, mushrooms, olives, turkey pepperoni, chicken, ham, sausage, etc.


Instructions

  1. Prep: Preheat your oven to 200°C (400°F). Line a baking tray with aluminum foil or parchment paper and lightly brush it with olive oil to prevent sticking and help crisp the crust.
  2. Combine the dough ingredients: In a large mixing bowl, add the all-purpose flour, Greek yogurt, fine sea salt, baking powder, any dried seasonings or herbs if using, and extra virgin olive oil. Stir together with a spoon until the mixture resembles crumbly dough pieces.
  3. Knead and roll: Lightly dust your work surface with some flour. Transfer the dough crumbles to the surface and knead with your hands for about one minute, adding flour a teaspoon at a time if it feels too sticky, or adding water if too dry. Form the dough into a ball and, if you like, divide it into two equal portions for two individual pizzas. Flatten the dough and roll it out with a rolling pin to your preferred shape and thickness. Rolling it thinner will give you a crispier crust; thicker will yield a softer, pillowy pizza base.
  4. Add toppings: Place the rolled dough onto the prepared baking tray. Spread the pizza sauce evenly over the dough, then add your chosen toppings and sprinkle with shredded cheese.
  5. Bake, slice, and enjoy: Bake in the preheated oven for 15 minutes or until the cheese melts and begins to brown slightly. Remove from oven and allow to cool on the tray for 1-2 minutes. Transfer to a cutting board, slice, and serve warm.
