Description

This Grilled Hummus Sandwich with Sauteed Onion is a flavorful and wholesome vegan entree featuring caramelized onions, fresh tomato, peppery arugula, and creamy hummus layered between toasted bread. Savory, healthy, and easy to prepare, it makes a perfect quick lunch or light dinner.


Ingredients

For the Sauteed Onions

  • 1 large onion, halved and thinly sliced
  • 1 tablespoon olive oil

For the Sandwich

  • 4 slices bread of choice
  • 1/2 cup hummus (use your favorite)
  • 1 large tomato, sliced
  • 2 small handfuls of arugula
  • mineral salt & fresh cracked pepper, to taste
  • olive oil, for brushing


Instructions

  1. Saute onions: Heat 1 tablespoon olive oil in a medium pan over medium-high heat. Add the thinly sliced onions and cook, stirring occasionally, until they are golden around the edges and tender, about 5 to 7 minutes. Pay close attention during the last 2 minutes to avoid over-charring. Once cooked, set the onions aside.
  2. Preheat griddle: Heat your griddle or cast iron skillet over medium-high heat. Lightly grease the surface if needed; the recipe used a cast iron griddle without additional oil.
  3. Assemble sandwiches: Spread 2 tablespoons of hummus evenly over the inside of each bottom slice of bread. Layer each with sautéed onions, sliced tomato, and a handful of arugula. Season with mineral salt and fresh cracked pepper. Top with the remaining slices of bread and gently press down to compact the sandwich.
  4. Grill sandwiches: Brush or drizzle olive oil on the top slice of each sandwich. Place the oiled side down on the preheated griddle and cook for 2 to 3 minutes, until the bread is golden and toasted. Before flipping, brush the other side with olive oil as well. Flip the sandwich using a spatula and grill for another 2 to 3 minutes until golden brown and heated through. Remove from heat and serve immediately.
