Ingredients
Main Ingredients
- 1 pound lean ground beef
- 1/2 cup diced yellow onion
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 3/4 teaspoon kosher salt (or to taste)
- 1/2 teaspoon garlic powder
- 2 tablespoons chopped cilantro
- 1/2 cup salsa
- 8 corn tortillas
Toppings (optional)
- Cheese
- Lettuce
- Tomatoes
- Red onion
- Avocado
Instructions
- Heat the skillet: Place a large skillet over medium-high heat and drizzle a little olive oil into it to prevent sticking.
- Cook the ground beef and onion: Add the ground beef to the skillet, crumbling it with a spatula, then add the diced onion. Let the mixture cook undisturbed for a couple of minutes to allow browning, then stir occasionally as the onion softens and the beef cooks through.
- Add spices and salsa: Lower the heat to medium-low and stir in chili powder, ground cumin, smoked paprika, kosher salt, garlic powder, chopped cilantro, and salsa. Mix until everything is well combined.
- Simmer and thicken: If the mixture looks dry, add 1 to 2 tablespoons of water. Continue cooking for 3 to 5 minutes until the sauce thickens and flavors meld together. Taste and adjust seasoning if necessary.
- Warm the tortillas and serve: Heat the corn tortillas until warm and pliable. Fill each tortilla with a generous spoonful of the taco meat mixture and top with desired toppings such as cheese, lettuce, tomatoes, red onion, and avocado. Serve immediately.
Notes
- Store leftover taco meat in an airtight container in the refrigerator for up to 4-5 days.
- For longer storage, freeze the taco meat for up to 3 months and thaw before reheating.
