  • 1/2 cup diced yellow onion
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin

  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped cilantro
  • 1/2 cup salsa
  • 8 corn tortillas

Instructions

  1. Heat the skillet: Place a large skillet over medium-high heat and drizzle a little olive oil into it to prevent sticking.
  2. Cook the ground beef and onion: Add the ground beef to the skillet, crumbling it with a spatula, then add the diced onion. Let the mixture cook undisturbed for a couple of minutes to allow browning, then stir occasionally as the onion softens and the beef cooks through.
  3. Add spices and salsa: Lower the heat to medium-low and stir in chili powder, ground cumin, smoked paprika, kosher salt, garlic powder, chopped cilantro, and salsa. Mix until everything is well combined.
  4. Simmer and thicken: If the mixture looks dry, add 1 to 2 tablespoons of water. Continue cooking for 3 to 5 minutes until the sauce thickens and flavors meld together. Taste and adjust seasoning if necessary.
  5. Warm the tortillas and serve: Heat the corn tortillas until warm and pliable. Fill each tortilla with a generous spoonful of the taco meat mixture and top with desired toppings such as cheese, lettuce, tomatoes, red onion, and avocado. Serve immediately.
