Description

These Healthy Apple Banana Muffins are a deliciously moist and flavorful treat, perfect for breakfast or a wholesome snack. Made with ripe bananas, diced apples, and a touch of cinnamon, these muffins are naturally sweetened with dark brown sugar and enriched with Greek yogurt for added moisture and protein. This easy-to-make recipe yields soft, tender muffins with a delightful fruity aroma, perfect for the whole family to enjoy.

Ingredients

Fruit

  • 2 cups diced apples
  • 2 ripe bananas (about 1 1/3 cups mashed)

Wet Ingredients

  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup milk
  • 1 teaspoon vanilla bean paste

Dry Ingredients

  • 1 cup dark brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Prepare Apples and Oven: Dice your apples and set them aside. Preheat the oven to 350°F (175°C) and prepare the muffin tins by lightly greasing them or lining them with paper liners to prevent sticking.
  2. Melt Butter and Mix Sugar: Melt the unsalted butter either in the microwave or over the stove. Add the melted butter into the bowl of a stand mixer fitted with a paddle attachment. Add the dark brown sugar and mix together for 2 to 3 minutes until the mixture is smooth and well combined.
  3. Add Wet Ingredients: Stop the mixer momentarily to add mashed bananas, eggs, Greek yogurt, milk, and vanilla bean paste. Resume mixing until all ingredients are well incorporated and the batter is smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together all-purpose flour, baking soda, baking powder, cinnamon, and salt to ensure even distribution of leavening agents and spices.
  5. Incorporate Dry Ingredients: Add the dry ingredient mixture to the wet ingredients in three parts. Mix gently and just enough to combine after each addition to avoid overmixing, which can make the muffins dense.
  6. Fold in Apples: Using a spatula or scraper, fold the diced apples into the muffin batter carefully, ensuring they are evenly distributed without overmixing the batter.
  7. Fill Muffin Cups and Bake: Evenly distribute the batter into the prepared muffin tins using an ice cream scoop or spoon. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Let the muffins cool on a wire rack for a few minutes before serving. These muffins are best enjoyed warm.

Notes

  • Use ripe bananas as they provide natural sweetness and moisture.
  • Do not overmix the batter to keep muffins light and fluffy.
  • You can substitute Greek yogurt with sour cream or buttermilk if desired.
  • Make sure to test muffins with a toothpick to ensure doneness.
  • Store leftover muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
