Instructions
- Dissolve sugar: Add water and sugar to a microwave-safe bowl and microwave for 3-5 minutes, stirring every 60 seconds, until the sugar has completely dissolved. Alternatively, heat the mixture over medium-low heat on the stovetop until dissolved.
- Combine wet ingredients: Pour the sugar syrup into a mixing bowl along with the unsweetened applesauce, light olive oil, and vanilla extract. Fold gently to combine all wet ingredients evenly.
- Mix dry ingredients: Add oat flour, cocoa powder, baking powder, instant coffee, and chocolate chips into the wet mixture. Stir until the batter is fully incorporated and no lumps remain.
