Description

This Healthy Ground Chicken Meatloaf is a flavorful, lean twist on a classic comfort food. Made with ground chicken, fresh seasonings, and a tangy tomato glaze, it’s baked to juicy perfection and perfect for a nourishing family dinner or meal prep. The recipe balances wholesome ingredients like olive oil, panko breadcrumbs, and Parmesan cheese, enhanced by a flavorful glaze of ketchup, chili sauce, Worcestershire sauce, and maple syrup for a slight sweetness and tang.

Ingredients

Meatloaf Ingredients

  • 1.3 lbs ground chicken
  • 1 large egg
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon ketchup
  • 1 tablespoon dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic paste
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Tomato Glaze

  • 1/4 cup ketchup
  • 1 tablespoon chili sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon maple syrup or honey

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a medium-sized baking pan with parchment paper to prevent sticking and ensure even cooking.
  2. Mix the Meatloaf Ingredients: In a large mixing bowl, combine the ground chicken, egg, olive oil, diced onion, panko breadcrumbs, grated Parmesan cheese, ketchup, dijon mustard, Worcestershire sauce, garlic paste, kosher salt, and black pepper. Mix everything thoroughly, ideally using your hands, to ensure even distribution of all ingredients.
  3. Shape and Bake the Meatloaf: Transfer the mixture to the prepared baking pan and shape it into a loaf approximately 10 inches by 6 inches in size, centering it on the pan. Place the pan on the middle rack of the oven and bake for 40-45 minutes until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C).
  4. Prepare the Tomato Glaze: While the meatloaf bakes, combine ketchup, chili sauce, Worcestershire sauce, and maple syrup (or honey) in a small bowl to create a sweet and tangy glaze.
  5. Apply Glaze and Finish Baking: Once the initial baking time is complete, remove the meatloaf from the oven and increase the oven temperature to 400°F (205°C). Spread the prepared tomato glaze evenly over the surface of the meatloaf.
  6. Bake Again and Rest: Return the glazed meatloaf to the oven and bake for an additional 7-10 minutes to caramelize the glaze. After removing from the oven, allow the meatloaf to rest for at least 10 minutes to let juices redistribute before slicing and serving.

Notes

  • Using panko breadcrumbs adds a lighter texture, but regular breadcrumbs can be used as a substitute.
  • Make sure not to overmix the meat mixture to keep the meatloaf tender.
  • Letting the meatloaf rest before slicing helps maintain its moisture.
  • Internal temperature should reach 165°F for safe consumption of ground chicken.
  • Maple syrup adds a natural sweetness, but honey is a perfect alternative.
