Ingredients
2 cups Full-Fat Cottage Cheese
3 large Eggs
½ cup Almond Flour
¼ cup Honey or Maple Syrup (or sugar-free alternative)
1 teaspoon Vanilla Extract
1 teaspoon Lemon Zest
1 teaspoon Baking Powder
2 cups Mixed Berries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking dish.
- In a blender, combine the cottage cheese and eggs. Blend until smooth and creamy.
- Transfer the mixture to a bowl and stir in almond flour, honey or maple syrup, vanilla extract, lemon zest, and baking powder.
- Gently fold in the mixed berries, being careful not to crush them.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake for 35–40 minutes, or until the top is golden and the center is set.
- Allow the bake to cool for 20–30 minutes before slicing and serving.
Notes
- Use full-fat cottage cheese for the best creamy texture.
- Frozen berries can be used directly without thawing; coat lightly in almond flour to reduce excess moisture.
- Swap honey/maple syrup for sugar-free sweeteners if following a low-carb diet.
- Line the baking dish with parchment paper to prevent sticking.
- Store leftovers in the fridge for up to 4 days or freeze for longer storage.
