Ingredients
1 cup (120g) all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon Kosher salt
1/2 cup (113g) unsalted butter, room temperature
1/4 cup (30g) confectioners’ sugar
1/4 cup (50g) granulated sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2 tablespoons whole milk
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a stand mixer, cream the butter, confectioners’ sugar, and granulated sugar on medium speed for 2 minutes, scraping down the sides.
- Add the egg, vanilla extract, and milk. Beat until smooth and fluffy, about 30 seconds.
- Gradually mix in the dry ingredients on low speed until just combined.
- Chill the batter in the refrigerator for 10–15 minutes.
- Using a 1/2 teaspoon, scoop small dollops of batter onto the prepared baking sheet, spacing them 1 inch apart.
- Bake 12–15 minutes, rotating the pan halfway, until golden brown.
- Cool completely on a wire rack before serving.
Notes
Add lemon zest, cinnamon, or chocolate dip for variations.
Use gluten-free flour or dairy-free substitutes as needed.
Store in an airtight container for up to 1 week or freeze for 2 months.
