Description

Homemade Vanilla Wafers are buttery, golden-brown cookies with a rich vanilla flavor. Perfect for snacking, banana pudding, or pairing with tea, these crisp yet tender treats are fresher and more flavorful than store-bought versions.


Ingredients

1 cup (120g) all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon Kosher salt

1/2 cup (113g) unsalted butter, room temperature

1/4 cup (30g) confectioners’ sugar

1/4 cup (50g) granulated sugar

1 large egg, room temperature

1 teaspoon vanilla extract

2 tablespoons whole milk


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a stand mixer, cream the butter, confectioners’ sugar, and granulated sugar on medium speed for 2 minutes, scraping down the sides.
  4. Add the egg, vanilla extract, and milk. Beat until smooth and fluffy, about 30 seconds.
  5. Gradually mix in the dry ingredients on low speed until just combined.
  6. Chill the batter in the refrigerator for 10–15 minutes.
  7. Using a 1/2 teaspoon, scoop small dollops of batter onto the prepared baking sheet, spacing them 1 inch apart.
  8. Bake 12–15 minutes, rotating the pan halfway, until golden brown.
  9. Cool completely on a wire rack before serving.

Notes

Add lemon zest, cinnamon, or chocolate dip for variations.

Use gluten-free flour or dairy-free substitutes as needed.

Store in an airtight container for up to 1 week or freeze for 2 months.
