Description

These Homemade Veggie Tots are a delicious and healthy snack made from fresh zucchini, carrot, and broccoli, combined with cheese and breadcrumbs for a crispy finish. Ingredients

Vegetables

  • 1 medium zucchini (cut into chunks)
  • 1 medium carrot (peeled and cut into chunks)
  • 1/2 a head of broccoli (roughly chopped into large florets)

Binding & Flavoring

  • 1/3 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely grated parmesan cheese
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4-1/2 teaspoon salt (optional)

Instructions

  1. Prepare the vegetables: Place the zucchini, carrot, and broccoli into a food processor and pulse until the vegetables are finely ground, ensuring no large chunks remain for a smooth mixture.
  2. Remove excess moisture: Use a kitchen towel or cheese cloth to squeeze out as much moisture from the vegetable mixture as possible to prevent soggy tots.
  3. Mix the ingredients: Transfer the drained vegetable mixture into a large bowl. Add panko breadcrumbs, eggs, shredded cheddar cheese, parmesan cheese, onion powder, garlic powder, and salt if using. Mix everything well until thoroughly combined.
  4. Shape the tots: Scoop out heaping tablespoon-sized portions of the mixture and shape them into small tot shapes using your hands, pressing firmly to hold together.
  5. Prepare the air fryer: Spray the air fryer basket with olive oil cooking spray to prevent sticking. Place the shaped tots in the basket, making sure to leave space between each tot to allow even cooking.
