Ingredients
4 boneless skinless chicken thighs
2 tablespoons honey
1 tablespoon lime juice
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
Instructions
- Place chicken thighs on a cutting board, trim excess fat, and pat dry with paper towels.
- In a small bowl, whisk together honey, lime juice, garlic, olive oil, chili powder, cumin, salt, pepper, and smoked paprika until smooth.
- Place chicken in a shallow dish or resealable bag and coat with marinade. Refrigerate for at least 30 minutes or up to 2 hours.
- Preheat grill to medium-high heat (375°F–400°F) and lightly oil the grates.
- Remove chicken from marinade, letting excess drip off. Place on grill and cook 5–7 minutes per side.
- Grill until internal temperature reaches 165°F.
- Remove from grill and let rest 5 minutes before serving.
- Serve hot with your favorite sides.
Notes
- For extra heat, add cayenne pepper or increase chili powder.
- Fresh herbs like cilantro or thyme can add extra flavor to the marinade.
- Substitute lemon juice if lime is unavailable.
- Bone-in chicken thighs can be used, but increase grilling time slightly.
- This recipe can also be baked in the oven at 400°F for 20–25 minutes.
