These Viral Hot Honey Ground Beef Bowls are a delicious and healthy dinner option packed with unique flavors and 42 grams of protein per serving. Featuring roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, fresh avocado, and a drizzle of spicy hot honey, this easy recipe comes together in just 35 minutes with minimal effort, making it a perfect weeknight meal.

Ingredients

Sweet Potatoes

  • 4 1/2 cups cubed sweet potatoes (about 1 1/2 pounds)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cinnamon
  • Avocado oil spray

Ground Beef Mixture

  • 1 pound lean ground beef
  • 1 Tablespoon tomato paste
  • 1 Tablespoon taco seasoning

Additional Toppings

  • 2 cups low-fat cottage cheese
  • 1 large avocado (or 2 small), sliced
  • 4 Tablespoons hot honey

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the sweet potatoes.
  2. Prepare Sweet Potatoes: Place the cubed sweet potatoes on a large baking sheet. Spray them evenly with avocado oil, then sprinkle with salt, pepper, and cinnamon. Toss well to coat all pieces uniformly.
  3. Roast Sweet Potatoes: Roast the sweet potatoes in the preheated oven for 30 minutes, flipping them halfway through cooking to ensure even roasting and caramelization.
  4. Cook Ground Beef: While the sweet potatoes are roasting, heat a non-stick skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Stir in tomato paste and taco seasoning, cooking for a few more minutes until well combined and heated through.
  5. Assemble Bowls: Divide the roasted sweet potatoes and seasoned ground beef evenly among four bowls. Add a scoop of low-fat cottage cheese and slices of fresh avocado to each bowl. Finally, drizzle each bowl with hot honey to add a sweet and spicy finish. Serve immediately and enjoy!

Notes

  • You can substitute the taco seasoning with your preferred blend of spices if desired.
  • If hot honey is unavailable, you can mix honey with chili flakes to create a similar flavor.
  • Avocado oil spray helps achieve a nice roast on the sweet potatoes but can be replaced with any cooking oil spray.
  • For lower sodium, use low-sodium taco seasoning and reduce added salt.
  • This recipe is gluten-free; ensure all seasoning ingredients comply with your dietary requirements.
