Ingredients
2 lbs ground beef

10 oz minestrone soup (2 cans)
14.5 oz pinto beans with jalapeno peppers (1 can)
10 oz tomatoes and green chiles, diced (2 cans)
Garlic powder, to taste
Seasoned salt, to taste
Ground black pepper, to taste
Instructions
- In a skillet over medium heat, cook the ground beef and chopped onions until the beef is evenly browned and the onions are tender. Drain the grease.
- In a large pot, combine the cooked beef and onions with the minestrone soup, pinto beans with jalapeno peppers, and diced tomatoes with green chiles.
- Season with garlic powder, seasoned salt, and ground black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 1 hour, stirring occasionally.
- Once the stew is heated through and the flavors have melded together, serve warm and enjoy!
Notes
Add extra vegetables like bell peppers, corn, or carrots for more heartiness.
Substitute ground beef with ground turkey or chicken for a leaner option.
Adjust the amount of jalapenos or green chiles to control spice level.
Top with shredded cheddar or Monterey Jack cheese for added richness.
Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
