This Huevos Rancheros Casserole is a delightful, layered baked dish perfect for a hearty breakfast or brunch.   • 12 small corn tortillas
  • 1 (15 ounce) jar salsa verde
  • 2 cups shredded Mexican blend cheese
  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 avocado, sliced

Instructions

  1. Preheat Oven: Preheat your oven to 375 ℉ (190 ℃) to prepare for baking the casserole evenly.
  2. Layer First Half: Spread 1/4 cup of salsa verde evenly on the bottom of a 9×13 inch baking dish. Next, arrange 6 corn tortillas over the salsa, overlapping as needed to cover the surface. Pour half of the remaining salsa over the tortillas, then sprinkle half of the rinsed and drained black beans followed by 1 cup of shredded Mexican blend cheese.
  3. Layer Second Half: Repeat the layering with the remaining 6 tortillas on top, followed by the remaining salsa verde, the rest of the black beans, and the remaining 1 cup of shredded cheese.
  4. Bake Cheese Melt: Place the casserole in the preheated oven and bake for 10 minutes or until the cheese is melted and bubbly.
  5. Add Eggs: Remove the casserole from the oven and gently create six wells in the melted cheese using the back of a spoon. Crack one egg into each well and season each egg with salt and pepper to taste.
  6. Finish Baking: Return the casserole to the oven and bake for an additional 15-20 minutes, or until the egg whites are set but the yolks remain runny.
  7. Add Toppings and Serve: Remove from the oven and top the casserole with fresh pico de gallo, sliced avocado, and crumbled cotija or feta cheese. Serve immediately for a delicious and satisfying meal.
